Pizza Tortilla Pie is my ultimate lazy girl comfort food. It’s an ooey, gooey, stodgy delight that tastes a bit like pizza, but is sort of similar to lasagna with the doughiness of a burrito. This recipe might not be for everyone, but I absolutely adore it and it’s so quick & easy to make.

There are no tricks to making Pizza Tortilla Pie and all the ingredients are easy to find in any grocery store. This is a great convenience recipe, perfect for weeknights or the times when you just don’t want to cook. Simply layer up the ingredients, chuck it into the oven and boom – dinner is served! The bonus is that Pizza Tortilla Pie is even better the next day, warmed up in the microwave until it’s piping hot.

Serves 6

Ingredients

  • 360g package of large flour tortillas (6 count)
  • 1 tin (400g) pizza sauce
  • 90g sliced pepperoni
  • 500g shredded mozzarella cheese
  • Olive oil for drizzling
  • Pinch of dried basil
  • Pinch of dried oregano
  • Black pepper

Method

  1. Preheat the oven to 200°C / 180° Fan / 400°F and prepare a 35cm rectangular pyrex casserole or roasting tin with some non-stick cooking spray.
  2. Take 3 of your tortillas and cut them in half. Take the other 3 tortillas and cut them into half and then each half into half again so you have like 4 pie pieces.
  3. Start laying down the first layer of tortillas. Lay one half-sized piece with the flat edge against the long straight side of the dish and the circular part in the middle. Repeat this on the other side. Now take 2 quarters of tortilla and position the pointed ends into the quarters with the rounded sides again in the middle and repeat on the other end. You will use 2 whole tortillas per layer – 4 quarter pieces and 2 half-sized pieces – so you should in the end have 3 layers of your pie. After positioning them, the round edges should all be in the middle of the dish and the straight edges lining the perimeter – the majority of the bottom of the dish should be completely covered.
  4. Spoon some of the sauce over and spread it out as best as you can with the back of the spoon. Keep in mind you have 3 layers so only use 1/3 of the sauce for the first layer. Now layer on 1/3 of the pepperoni slices spread out evenly over the surface and sprinkle 1/3 of the shredded mozzarella cheese on top. Now repeat this step with the remaining ingredients until you have 3 layers with cheese on top.
  5. Lightly drizzle some olive oil across the top and sprinkle with the dried basil, dried oregano and finish with a good grinding of black pepper.
  6. Put the dish into the preheated oven and back for 20 to 25 minutes or until the cheese is all melted and starting to look golden around the edges. Cut into 6 squares and serve hot.
