I’ve been making green beans this way for more than a decade and it never gets old. Chilli Garlic Green Beans are easy to make, require only a few ingredients and they are the perfect side dish to complement so many meals! They also look gorgeous on the plate with the glistening vibrant green, speckled with red & white – just gorgeous.

You can use any green beans you like, however I almost always use fine or super fine as they cook quickly and work really well for this recipe. You can choose to cook them however you like to whatever consistency you prefer. I enjoy beans best when they’re quite soft & tender while others prefer them more crunchy. This recipe will work either way, so do what you prefer.

In terms of other ingredients, you don’t need much – just garlic infused oil, dried chilli flakes and some flaky sea salt and that’s it. Easy peasy and it’s likely you already have most of these ingredients in your cupboards. If you don’t have garlic oil, try regular extra virgin olive oil or another flavour instead. Chilli, lemon or basil flavours can also work, but in that case you won’t get any garlic flavour unless you add it some other way. Let’s get started!

Serves 2 to 4

Ingredients

  • 300g trimmed fine green beans
  • 1 to 2 tablespoons garlic infused olive oil
  • Generous pinch of dried chilli flakes
  • Sea salt flakes to serve

Method

  1. Cook the green beans in boiling salted water until they are as soft as you like. If you like them with some crunch, cook for only about 5 minutes. If you like them more tender, cook longer until the desired consistency is achieved.
  2. Strain the beans and return to the pan over medium heat. Allow to sit in the pan over heat tossing a bit for about a minute to steam off any remaining water.
  3. Drizzle in enough garlic oil to coat the beans and add the chill flakes. Cook while stirring and tossing for another couple of minutes.
  4. Sprinkle with sea salt flakes and serve hot.
