There’s nothing quite like a cold glass of lemonade when you’re sitting outside on a hot, sunny day. If I want something a little more special, I reach for Pink Grapefruit Lemonade. It’s delicious and so beautiful to look at!

Glass of Pink Grapefruit Lemonade

Grapefruit can be quite bitter for some people, but this mixture of sugar, lemon juice, grapefruit juice, a little salt and water is so balanced that even my husband who detests grapefruit really enjoys it!

You don’t need much to make this. A juicer of some kind that’s big enough for a grapefruit is needed. I have a handheld manual one that sits on top of a jar and that works perfectly. Otherwise, a saucepan and a mixing bowl will do and if you have a jar or a pitcher for serving, then great, but if not just ladle it into glasses with some ice and enjoy. Let’s get started!

Ingredients

  • 50g caster sugar
  • 1/4 teaspoon sea salt flakes
  • Juice of 4 pink grapefruit
  • Juice of 2 lemons
  • Grapefruit slices or wedges for serving (optional)
  • Ice for serving

Method

  1. Start by making a simple syrup. Add the sugar with 100ml of water to a small saucepan and bring it to a simmer. Stir to dissolve the sugar into the water and once it’s all combined, set it aside to cool.
  2. Add 400ml of water and some ice to a large jug or mixing bowl. Pour in the simple syrup, salt, grapefruit and lemon juices. Stir to combine with a large wooden spoon. Pour into glasses with ice and serve with a slice or wedge of grapefruit if desired. Store any leftovers in the refrigerator in a sealed container and consume within a day or two.
