There’s nothing quite like a cold glass of lemonade when you’re sitting outside on a hot, sunny day. If I want something a little more special, I reach for Pink Grapefruit Lemonade. It’s delicious and so beautiful to look at!

Grapefruit can be quite bitter for some people, but this mixture of sugar, lemon juice, grapefruit juice, a little salt and water is so balanced that even my husband who detests grapefruit really enjoys it!

You don’t need much to make this. A juicer of some kind that’s big enough for a grapefruit is needed. I have a handheld manual one that sits on top of a jar and that works perfectly. Otherwise, a saucepan and a mixing bowl will do and if you have a jar or a pitcher for serving, then great, but if not just ladle it into glasses with some ice and enjoy. Let’s get started!
Ingredients
- 50g caster sugar
- 1/4 teaspoon sea salt flakes
- Juice of 4 pink grapefruit
- Juice of 2 lemons
- Grapefruit slices or wedges for serving (optional)
- Ice for serving
Method
- Start by making a simple syrup. Add the sugar with 100ml of water to a small saucepan and bring it to a simmer. Stir to dissolve the sugar into the water and once it’s all combined, set it aside to cool.
- Add 400ml of water and some ice to a large jug or mixing bowl. Pour in the simple syrup, salt, grapefruit and lemon juices. Stir to combine with a large wooden spoon. Pour into glasses with ice and serve with a slice or wedge of grapefruit if desired. Store any leftovers in the refrigerator in a sealed container and consume within a day or two.
