Piri Piri may be a Portuguese flavour, but you don’t need to travel to get your hands on some Piri Piri seasoning which is easy enough to find in your local supermarket. I have recently begun to depend on Piri Piri seasoning as a staple in my cupboards for spicing up everything from meats & fish to veggies and I love it. As it turns out, Piri Piri is absolutely incredible as a flavouring for butter!
I like to make a whole roll of this butter and keep it in my fridge. I’ll add it to sweet peas, corn cobs, potatoes or any other veggies. I use it to scramble eggs for a bit of a flavour pop. It’s also incredible for flavouring meats & fish. For something so simple, it’s so deliciously versatile!
If you don’t have a food processor, don’t worry. It makes quick and easy work of blending up this compound butter recipe, but you can absolutely do this by hand using a wooden spoon or a fork, a mixing bowl and some good ole fashioned elbow grease. It’s totally worth it! Let’s get started.
Ingredients
- 200g unsalted butter, softened
- 2 tablespoons storebought Piri Piri Seasoning
- Zest of 1 lime
- Juice of 2 limes
- Generous pinch of salt
Method
- Add all the ingredients to the bowl of a food processor and whiz until fully combined.
- Lay out a sheet of cling film on a flat, even surface and scrape the butter mixture out of the food processor bowl directly onto the sheet of cling film.
- Use the slack of the cling film to work and manipulate the butter into a shape of your choosing such as a long roll or a rectangle. Something that will make it easy to store and more importantly, easy to slice it into serving sizes. Wrap it all up as best you can (it will be soft and mushy) and put into the refrigerator for a few hours or until firm enough for slicing.
- Use it instead of regular unsalted butter for Cheesy Corn Cakes.
- Spread it on Red Leicester & Sour Cream Scones for a punch of flavour.
