There are some brands of dark chocolate chips for example that contain gluten and\/or dairy while others do not, so do keep that in mind, especially if you have someone&#8217;s dietary requirements to consider. Let&#8217;s get started!<\/p>\n\n\n\n<p class=\"\"><strong><em>Makes 10 &#8211; 12 cookies<\/em><\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li class=\"\">225g smooth peanut butter<\/li>\n\n\n\n<li class=\"\">100g soft light brown sugar<\/li>\n\n\n\n<li class=\"\">1\/2 teaspoon bicarbonate of soda (<em>baking soda<\/em>)<\/li>\n\n\n\n<li class=\"\">Pinch of sea salt flakes<\/li>\n\n\n\n<li class=\"\">1 large egg<\/li>\n\n\n\n<li class=\"\">1 teaspoon vanilla extract<\/li>\n\n\n\n<li class=\"\">50g dark chocolate chips <\/li>\n\n\n\n<li class=\"\">A bit more sea salt to sprinkle on the cookies<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Method<\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li class=\"\">Preheat the oven to 180\u00b0C and line two baking sheets with non-stick baking paper.<\/li>\n\n\n\n<li class=\"\">Add the peanut butter, brown sugar, bicarbonate of soda and salt to the bowl of a stand mixer and beat the ingredients until well combined. If you don&#8217;t have a stand mixer, a handheld mixer and a mixing bowl will work just fine. Alternatively you can do it by hand with a wooden spoon.<\/li>\n\n\n\n<li class=\"\">Add the egg and vanilla extract and beat a bit more to combine.<\/li>\n\n\n\n<li class=\"\">Fold in the chocolate chips.<\/li>\n\n\n\n<li class=\"\">Use a tablespoon to scoop out blobs of cookie dough and place them in mounds on the baking sheets. You should get 10 to 12 scoops of cookie dough.<\/li>\n\n\n\n<li class=\"\">Sprinkle a little bit of sea salt on each mound of dough and bake the trays of cookies one at a time on the middle rack of the oven for about 10 minutes each. The cookies are done when they look slightly undercooked and are darker around the edges.<\/li>\n\n\n\n<li class=\"\">Leave the cookies to cool for 10 to 20 minutes on the trays. If you want them to be perfectly round, simply place a round glass over the cookie and swirl around the edge in a circle.
