That said, investing in a good quality ice cream maker is one of the best things I did during lockdown. It&#8217;s expensive, but if you really like ice cream, there&#8217;s nothing quite like homemade and you&#8217;re options aren&#8217;t limited by what&#8217;s in stock at your grocery store. My machine is the <a href=\"https:\/\/rstyle.me\/+0617bQ34eJZspK7eLzlmrA\" target=\"_blank\" rel=\"noreferrer noopener\">Cuisinart Professional Gelato and Ice Cream Maker<\/a> and I absolutely love it! It is expensive and definitely an investment, but it&#8217;s my opinion that with an ice cream maker after several failed attempts with cheaper versions, if you&#8217;re going to buy one, you&#8217;re better off buying the best you can afford.<\/p>\n\n\n\n<p>This recipe is super easy and it&#8217;s my go-to ice cream flavour, not to mention my all-time favourite. I&#8217;ve used mint chocolate and food colouring just to make it minty green, but you can feel free to use whatever chocolate you want and skip the food colouring if you can&#8217;t be bothered. I often do&#8230; It tastes exactly the same and somehow looks a bit more elegant when it&#8217;s creamy white rather than green. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>250ml whole milk<\/li>\n\n\n\n<li>150g caster sugar<\/li>\n\n\n\n<li>500ml heavy cream<\/li>\n\n\n\n<li>2 teaspoons peppermint extract<\/li>\n\n\n\n<li>1 bar (100g) mint dark chocolate (<em>I like <a href=\"https:\/\/www.waitrose.com\/ecom\/products\/lindt-excellence-mint-intense-dark\/055379-27797-27798\" target=\"_blank\" rel=\"noreferrer noopener\" title=\"https:\/\/www.waitrose.com\/ecom\/products\/lindt-excellence-mint-intense-dark\/055379-27797-27798\">Lindt Mint Intense<\/a><\/em>) or plain dark chocolate<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Method<\/strong><\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pour milk and caster sugar into a bowl and stir with a wire whisk until completely dissolved. <\/li>\n\n\n\n<li>Stir in the heavy cream and peppermint extract.<\/li>\n\n\n\n<li>Pour into your ice cream maker and churn for about 25-30 minutes. Depending on the machine you&#8217;re using, it may take a little longer. You want to churn it until it&#8217;s nearly as set as it&#8217;s going to be, a bit like soft serve.<\/li>\n\n\n\n<li>Meanwhile, use a sharp knife to shave the chocolate as finely as you can. You might find it starts to melt, so it&#8217;s good to take a break and stick it in the fridge for a few minutes and then start again.<\/li>\n\n\n\n<li>When your ice cream is starting to set, pour in the chocolate and let it churn for another 5 minutes or so.
