I am never without at least one bag of petit pois in my freezer because they really come in handy whether I&#8217;m throwing them into a pasta dish or making a pot of peas to serve with whatever else I&#8217;m making for dinner.<\/p>\n\n\n\n<p>I found out what happens with peas and lemon one day by accident. The lemon juice can effect the colour of the peas, but I find the flavour combination delightful and refreshing. I like mine very soft, so I typically boil them for at least 15 to 20 minutes.<\/li>\n\n\n\n<li>When the peas are cooked to your liking, strain them and leave them in the strainer.<\/li>\n\n\n\n<li>Add the oil and butter to the same pan on medium heat and let the butter melt. Once it&#8217;s hot, stir in the lemon zest and the chilli flakes. Let that sizzle for just a minute before pouring in half of the  lemon juice. <\/li>\n\n\n\n<li>Add the peas and season with a bit of salt and freshly ground black pepper. Stir to coat the peas in the mixture. Taste and if desired, add the rest of the lemon juice. <\/li>\n\n\n\n<li>Remove everything to a serving dish and sprinkle with the chopped mint.
