Olive Oil Oven Fries

There’s nothing better than French fries and they’re even better when homemade. When the weekend finally arrives and you want something fun and delicious to eat with your homemade cheeseburgers or just a simple plate of nibbles to enjoy in front of the TV, this is the answer – Olive Oil Oven Fries.

There’s no deep frying to worry about – no grease to dispose of or splatter to dirty up your kitchen. These delicious fries taste so good, but only require a few simple ingredients. This recipe makes enough for two hungry people, but you can easily amend it to feed more. Simply use more potatoes and perhaps a larger baking tray if needed. Eat them with your favourite sauces or dips if you like, but I always have mine plain with nothing more than sea salt and sometimes a little seasoning salt – they’re so good they don’t need anything else. Let’s get started!

Ingredients

  • 2 large potatoes
  • A good, generous glug of olive oil
  • Sea Salt flakes
  • Seasoning Salt (optional)

Method

  1. Preheat the oven to 220°C / 200° Fan / 425°F.
  2. Start cutting the potatoes into fries and just leave the skins on. You can peel them if you like, but as far as I’m concerned, it’s really unnecessary. Without being too particular, you want them to be about 2-3cm thick, but honestly you can play around with this and it’s better if they’re not uniform in size because you’ll get more variety. Place your freshly cut skin-on fries onto a large non-stick baking tray.
  3. Drizzle plenty of olive oil over all the fries and use your hands to scoot them around making sure every piece is coated with the slick oil. Once all the fries are coated, sprinkle some sea salt over them and seasoning salt if you’re using it. I like Lawry’s Seasoning Salt or Old Bay Seasoning – both can be purchased from Amazon, but you can use whatever you like. Feel free to get creative.
  4. Pop the fries into the oven for 35-40 minutes, giving them a shuffle and turn about halfway through the cooking time. They’re done when the thickest is cooked through and soft in the middle and they’re all a bit crispy & golden.
  5. Remove the fries from the baking tray with a spatula to a plate lined with paper towels to soak up some of the residual oil. Sprinkle with a bit more sea salt if you like them salty (I do!) and serve hot.
