When the summer sun is giving a scorcher of a day, there’s nothing more appropriate than an ice cold glass of lemonade. I grew up on the stuff and while I wouldn’t be the type who drinks it every day, I can’t resist it a few times a year, especially when summer unfolds its hottest days – it’s just so refreshing!
The addition of mint to this classic summer drink just adds to the cooling effect and gives a real punch of flavour. It’s not at all difficult to make and only requires a few minutes of your time. When served over ice, it’s ready pretty much immediately and the perfect thing to throw together quickly if you have guests coming. Let’s get started!
Ingredients
- 6 large lemons, thinly sliced
- Leaves from 25g of fresh mint (stems discarded)
- 250g white caster sugar
- 120ml fresh lemon juice
- 500ml water
- Ice cubes to serve
Method
- Add the lemon slices, mint leaves and about 1/2 of the sugar to a large bowl. Using a potato masher, a cocktail muddler or the bottom of a sturdy glass, mash the contents of the bowl for about 5 minutes until juicy.
- Strain the mixture through a sieve over another bowl, being sure to press the solids as much as you can to squeeze out any juice & flavour you can. Add the rest of the sugar and the water. Stir to combine and pour into a jug or pitcher filled with ice. Leave it to stand for about 5 minutes or so.
- Serve cold in glasses with ice.
