Slow Cooker BBQ Pulled Chicken

Pulled BBQ chicken is one of life’s greatest pleasures. It’s juicy, tender and flavourful, but it’s also really versatile – there are just so many things you can do with it. Serve it as a main dish alongside mashed potatoes & cornbread or corn on the cob, pile it into buns for sandwiches or sliders or even use it as a topper for potato skins, pizza or jacket potatoes. The options are endless and delicious.

This recipe for BBQ pulled chicken is especially easy because it’s made in the slow cooker. If you’re lucky enough to have leftovers, they will warm up beautifully. If you have quite a lot leftover, consider freezing it for enjoying at a later time.

When it comes to the type of BBQ sauce you use, that’s completely up to you. I prefer Sweet Baby Ray’s BBQ Sauce because it tastes the most like the sauces I’m used to, but I also like Heinz BBQ Sauce as well. You can choose and experiment with whatever BBQ sauces you like, which is part of the fun. Let’s get started!

Serves 8 to 10

Ingredients

  • 510g BBQ Sauce (I like Sweet Baby Ray’s)
  • 1 tablespoon regular olive oil
  • 2 tablespoons Worcestershire sauce
  • 30g soft brown sugar
  • 1 kg chicken breasts (approximately 6 chicken breasts)

Method

  1. Pour all the ingredients except the chicken into the bowl of a slow cooker and give them a stir to combine until well mixed.
  2. Add the chicken breasts and turn them about in the sauce until they are all well-coated on all sides. Pop on the lid and cook in the slow cooker for about 3 hours on high or 6 hours on low. Check on the chicken two or three timesnduring the cooking to baste it with some of the sauce to prevent drying. It’s important to insure that the chicken is appropriately cooked through and easy to shred before serving – this may vary due to differences in slow cookers.
  3. When the chicken is fully cooked use 2 forks to shred it by pulling them in opposite directions. It should be tender and easy to shred when it’s done. I typically do this step in the pot itself, but if you prefer you can remove the chicken breasts to a cutting board and then once it’s shredded return all the meat back to the pot. Stir to coat all the meat in the delicious sauce.

How to enjoy the leftovers…

This delicious recipe needs nothing to be delicious, but should you be lucky enough to have leftovers, you can’t go wrong with BBQ Chicken Bao Buns. Simply reheat your chicken either in the microwave or in a saucepan with a little water to keep it from drying out until it’s piping hot. Microwave some ready-made bao buns which you can find in the refrigerator section of most grocery stores and fill the buns with the delicious chicken. Sprinkle with some finely chopped chives or spring onions and enjoy!
