Chilli Garlic Soya Beans

Edamame is so delicious and this recipe couldn’t be faster or simpler to prepare. I love to have Chilli & Garlic Soya Beans alongside teriyaki dishes or salmon. It only takes a few minutes to prepare and really adds a beautiful colour, not to mention delicious flavours to the plate.

You’ll want to make sure for this recipe that you buy the bag of frozen, shelled edamame or soya beans – not the ones that are still in their pods. You can cook them straight from frozen and weigh them while frozen as well.

Serves 2-3

Ingredients

  • 200g frozen, shelled soya beans (edamame)
  • 1 tablespoon garlic infused olive oil
  • 1/2 teaspoon dried chilli flakes
  • Generous sprinkling of sea salt flakes
  • About a teaspoon of finely chopped fresh parsley to serve (optional)

Method

  1. Cook the edamame in boiling water according to packet instructions. Usually this requires simply boiling the soya beans for about 5 minutes.
  2. Strain the beans and return them to the same pan. Reduce the heat to medium-low and give them a stir in the pan to dry them out a bit.
  3. Pour in the garlic oil and the chilli flakes. Cook while stirring for a minute or two until the chilli flakes start to give off their colour. Make sure all the soya beans are coated in the flavourful oil.
  4. Remove from the heat and sprinkle generously with sea salt and finely chopped fresh parsley if you’re using it. Serve hot.

Pairs well with Mustard & Chilli Salmon.
