Sometimes a simple, flavourful, elegant bowl of pasta is all that’s needed. That’s what my One Pot Lemon & Thyme Linguine offers as well as minimal washing up. It’s the perfect weeknight supper! The recipe feeds two hungry people, but could easily be doubled to feed 4 or 5.
Ingredients
- 250g Linguine
- 2 tablespoons extra virgin olive oil
- 20g unsalted butter
- Zest & Juice of 1 lemon
- 2 fat cloves of garlic, grated
- Leaves from a small handful of Thyme stalks (at least 1 tablespoon of leaves)
- 30g grated Parmesan cheese
- Finely chopped fresh parsley & additional thyme leaves to serve
Method
- Cook the pasta according to packet instructions until it’s al dente. Just before straining, reserve a cupful of the starchy cooking water. Strain the pasta and set it aside.
- Reduce the heat to medium-low. Using the same pot, heat the oil and butter. Add the garlic and cook for a minute, taking care not to burn it. Add the lemon zest and lemon juice and cook for another minute more.
- Add the pasta, the parmesan cheese and the fresh thyme leaves and toss until it’s all combined and every strand of pasta is coated adding the starchy pasta water about a tablespoon at time until the pasta is all coated in the scant, but glossy sauce.
- To serve, transfer the pasta to warm plates or bowls and sprinkle with the chopped parsley & thyme leaves from a height.
