Grinch Rice Krispy Treats

The Grinch is one of my all-time favourite holiday films. It never gets old and I watch it every year. I cry every single time at the end… It’s such a wonderful classic!

This recipe is simply a version of classic Rice Krispy Treats that’s just been decorated a little for the Christmas season. It’s super fast & easy to make and perfect for parties, homemade gifts, kids’ parties or events or to bring to a bake sale. I just made them for fun and that’s just as good a reason as any! I’ll probably wrap them up in little treat bags and give them to my friends when I see them this week.

To make the hearts I used ready to roll red fondant I ordered online. I rolled it out on some non-stick baking paper and used a heart shaped fondant punch to cut the hearts. You could cut them by hand with a small blade or use ready made heart-shaped candies or cake decorations – whatever you can find will work. I used a small kitchen torch to melt a spot to attach them, but if you don’t have one you could use some edible food glue, a tiny blob of melted marshmallow or a tiny squirt of royal icing. Let’s get started!

Ingredients

  • 45g of butter, plus more for greasing
  • 300g mini marshmallows (You can also use bigger ones, but cut them up so they melt faster.)
  • 180g crispy rice cereal like Rice Krispies
  • Green food colouring
  • Small amount of ready to roll red fondant or any red, heart shaped candy pieces or heart shaped cake decorations

Method

  1. Grease a large, rectangular Pyrex Dish or cake pan (31cm x 23cm) with butter and set aside.
  2. Add the butter and marshmallows to a large pot on medium-low heat and stir continuously until it’s smooth and completely melted. Once melted, add in enough food colouring to get the colour of green you desire.
  3. Remove from the heat and stir in your crispy rice cereal as quickly as you can before the mixture cools too much. It’s hard work, but do your best to get it all completely combined.
  4. Transfer the mixture immediately to your greased dish and flatten it by pressing it down to compact it and shape it into a flat slab, filling every corner of the dish. I like to use my hands and I wear a disposable glove sprayed with non-stick cooking spray so it doesn’t stick.
  5. While the treats are cooling, it’s time to get on with the decorations. Roll out your fondant if you’re using it on a piece of non-stick baking paper and cut the hearts out.
  6. When the treats are cool enough, cut them into 12 even pieces. To attach the hearts you can either use a bit of royal icing, a blob of melted marshmallow or if you have a small kitchen blowtorch, simply heat up a little spot and stick the heart on and it will stay.
