When I want a quick & easy breakfast that will feed a few people, I make my Ham, Egg & Cheese Puff Tart. This one tray recipe is a whole breakfast with very little mess or fuss. The bonus is that it’s so incredibly delicious!
I’ve only specified two eggs in this recipe because that’s how I normally make it in case there’s anyone eating who would prefer to not have egg, but if you want you could double or triple that to get more egg across the tart. I sometimes do make it with more. It’s really up to you and your preference. If you don’t like eggs at all you could skip them altogether, but I do think they make it look really beautiful.
Ingredients
- 1 ready made puff pastry roll, rested outside the fridge for at least 10 minutes
- 6 slices of honey ham
- 100g shredded Emental cheese
- 2 eggs
- 1 egg, lightly beaten
- Freshly ground black pepper
Method
- Preheat the oven to 220°C / 200° Fan / 425°F and line a baking sheet with baking paper.
- Open the puff pastry and roll it out onto the lined baking sheet. Line the sheet with ham slices and roll the sides in towards the middle a bit to make a bit of an outside border edge.
- Sprinkle the cheese across the whole tart and make 2 nests or holes in the cheese where the eggs will sit.
- Crack the two eggs into the nests and sprinkle freshly ground black pepper all over the tart.
- Bake for 25 minutes. Cut into 6 evenly sized pieces to serve.
